Light and Spicy Asian Noodles and Chicken

As the days get cooler I find myself looking for something to warm my tummy. This great light recipe not only makes my insides delightfully toasty, it has a zesty kick that keeps me wanting more.

Light and Spicy Asian Noodles and Chicken

1 tablespoon dark sesame oil
1 tablespoon grated peeled fresh ginger
2 garlic cloves minced
1/2 cup frozen peas
2 cups chopped cooked skinless boneless chicken breast
1/2 cup chopped green onions
3 tablespoons low-sodium soy sauce
2 tablespoons rice vinegar
2 tablespoon hoisin sauce
2 tablespoons sambel oelek
1 package thin rice sticks

Heat oil in small skillet over medium-high heat. Add ginger and garlic to pan; cook about 45 seconds stirring constantly, than add frozen peas, cook until thawed. Stir in next six ingredients and stir until warm, poor mixture into large bowl.

Meanwhile, boil rice sticks for approximately five minutes, strain and cut into smaller pieces. Add to mixture in large bowl, toss and serve.
